Jeera Rice
The simplest way to make plain rice taste like something. Whole cumin bloomed in ghee perfumes every grain — the ideal partner for any dal or curry.

Ingredients
- 1.5 cups basmati rice, rinsed and soaked 20 min
- 1 tbsp ghee
- 1.5 tsp cumin seeds
- 1 bay leaf
- 2 cloves
- 1 small cinnamon shard
- 1 green cardamom pod
- 3 cups water
- Salt to taste
Method

Heat the ghee, add cumin, bay leaf, cloves, cinnamon and the bruised cardamom. Let the cumin sizzle and turn fragrant, about 30 seconds.

Drain the rice and add it to the pan. Toss gently for a minute so each grain coats in the spiced ghee.

Add the water and salt, bring to a boil, then cover and cook on the lowest heat for 12 minutes.

Turn off the heat and rest, covered, for 5 minutes. Fluff with a fork and serve.
