Dal Tadka
Comfort in a bowl — soft yellow dal finished with a dramatic sizzling tempering poured over the top at the table. The tadka is the whole point.

Ingredients
- 1 cup toor dal (or a toor-masoor mix), rinsed
- 1/2 tsp turmeric
- 1 tomato, chopped
- Salt to taste
- For the tadka
- 2 tbsp ghee
- 1 tsp cumin seeds
- 1/2 tsp mustard seeds
- 2 dried red chilies
- 3 garlic cloves, sliced
- 1/2 tsp red chili powder
- A pinch of asafoetida (hing)

Pressure-cook the dal with turmeric, tomato, salt and 3 cups water until completely soft. Whisk smooth, adding water to a pourable consistency, and keep warm.

For the tadka, heat the ghee until shimmering. Add mustard and cumin and let them pop.

Add the dried chilies, sliced garlic and hing. Fry until the garlic is golden — watch closely, it burns fast.

Take the pan off the heat, stir in the chili powder for two seconds, then pour the whole sizzling tadka over the hot dal. Stir once, cover for a minute to trap the aroma, and serve with rice.
